Reactions of raw/unpasteurized hand-packed ferments: Our kimchi products are living products, so pressure builds up inside the lid as the kimchi continues to ferment and release gases. This is a unique byproduct of raw fermentation and sometimes causes the lids to bulge/pop and you may experience bubbles and overflow. Therefore, when opening your jar for the first time, open over the sink/bowl. Many of our customers are delighted when they witness this activity and will post photos on Instagram.

Our kimchi is made in small batches very frequently to provide our customers an opportunity to experience the changes in fermentation and taste; different probiotic micro-organisms present themselves at different stages. We hope you enjoy the experience and love hearing your feedback.
